In the food & beverage industry accurate measurement of ingredients is imperative to ensure the produce is made correctly and has the right consistency. In the ice cream making process the main ingredients are sugar, milk, fruit juices, fat and water.
Depending on the kind of ice cream, the ingredients are weighed out accordingly and then added to a stirring vessel to be mixed. Once the product is homogenized at a pressure of around +140 bar and pasteurized at +80°C. The mixture is held in storage for approx 6 hours after being cooled in one minute to 4°C.
